Peanut Butter Tofu Thai Noodles
Ingredients:
1 Cup MaraNatha Organic Creamy Peanut Butter (Hint of Sea Salt)
1 1/2 Cups boiling water
5 Tablespoons Rice Vinegar
1 1/4 teaspoons salt
2 medium cloves of garlic, minced
1 1/2 Tablespoon sugar
1 Tablespoon soy sauce
1/2 teaspoon crushed red pepper
4 Tablespoons Chinese Sesame Oil
1/2 lb. Westsoy Baked Asian Tofu, cut into cubes
1 lb. Linguine noodles
1 cucumber, seeded and julienned 
4 scallions, minced (whites and greens)
3/4 Cups toasted peanuts 
Instructions:
- Fill tall pot 3/4 full with water, bring to boil. 
- Begin the peanut sauce by placing the cup of peanut butter in a medium-sized bowl. 
- Add 1 1/2 cups of boiling water from pot to the peanut butter and blend until consistency is uniform. 
- Return pot of boiling water to stove, add linguine. 
- In sauce bowl, stir in rice vinegar, salt, garlic, sugar, soy sauce, red pepper, sesame oil and Westsoy Asian Baked Tofu cubes. 
- Once linguine reaches desired tenderness, remove from heat and drain remaining water. 
- Place drained noodles in serving bowl. Pour sauce over top and begin mixing together.  
- While mixing, add in cucumber and scallions. 
- Portion out into individual bowls and top with toasted peanuts! 
- Prepare yourself for another date, you skilled, sexy, meatless maven!
