Cocoa Hazelnut Banana Pancake Cake
The title is a mouthful in it’s own rite and that doesn’t even include the entirety of it! This idea came about when my coworker wanted pancakes for his birthday, with Nutella. As we know, Nutella is not vegan, so I made two versions and this is the vegan one. This thing was pretty damn delicious, is made to share and is a great excuse to eat dessert for breakfast.

For the Pancakes:
2 Cups Whole Wheat Flour
2 Tbsp. Agave Nectar
2 Tbsp. Baking Powder
1/8 Tsp. Salt
1 Tsp. Cinnamon
2 Tbsp. Ground Flaxseed
1 Cup Almond Milk
1 Cup Water
2 Tbsp. Coconut Oil, melted
1/2 Cup Hazelnuts, Chopped
1 Medium Banana, Mashed
Directions:
Mix dry ingredient and wet ingredients separately and then together mixing until there are no flour chunks left. You want the batter to be a little watery so that they are thin, but not too watery! I used a soup ladle to spoon my batter onto a flat pan. Pour batter onto pan heated at medium into 5-6” rounds and wait until the top has quite a few bubbles coming through, then turn over and cook for another minute or two. Once done, set on cooling rack and do not stack.

For the Spread:
3 Tbsp. Peanut Butter
2-3 Tbsp. Unsweetened Cocoa Powder
1/4 Cup Almond Milk
2 Tbsp. Maple Syrup
Directions:
No need for a mixer or anything here, I just whipped up all the ingredients with a fork and some elbow grease ;). At first it’ll seem watery but it thickens up very quickly.
Assembly:
Start spreading the cocoa peanut butter in thin layers between pancakes and stack them. Once you put the top one on set the pancakes in your refrigerator. Take the remaining cocoa peanut butter and add 1-2 Tbsp. Coconut Oil (must be coconut oil!), and microwave until the oil melts a bit. Mix until it is smooth and pour over cool pancakes, it’ll harden slightly because of the coconut oil, and top with chopped hazelnuts. You can serve this warm or cold, I liked it heated up in the microwave for a few seconds; or you could forgo the cooling step and serve it up hot!
