Made dinner for my dad and I, tonight. Arugula pesto pasta with sautéed zucchini and onions, plus a salad of lettuce and chard (fresh from the garden here!) with cherry tomatoes, cucumbers and a homemade balsamic vinaigrette. Pretty good for this not being my kitchen! (at Preggio)

To those of you who are traveling in Italy, especially if you’re with people that aren’t vegan, I highly recommend keeping something like this on your phone to show servers/chefs. 90% of the places I’ve been are traditional Italian restaurants and this has been SUPER helpful! This way, there’s a very small chance of there being a miscommunication. Yay! 🎉🍴👌

I almost forgot about the wonderful meal I had the first day that I was in Rome! Il Margutta RistorArte is a vegetarian restaurant that has vegan options and a lunch buffet, right by the Spanish Steps. Good service, nice atmosphere and delicious food. (My dad even liked it!)

Well, this was pretty wild. I don’t think I ever could have fathomed how enormous St. Peter’s Basilica is. Incredible. (at The Vatican and St. Peters Basilica Square.)

Got my hands on some vegan gelato! A super rich dark chocolate and banana combo. So good! And it was right by the Trevi Fountain, which was incredible. (at Gelateria Valentino)
